Banana Nut No-Carb Protein Pancakes


The pancakes in the picture are topped with @Barney Butter and Sugar Free Maple Syrup. YUM. Here is how I made them:

Ingredients:

2 egg whites

1 scoop Myofusion Banana protein powder

1 tsp baking powder

2 packet Splenda

1 1/2 tbsp water(until mixes well, you want it kind of thick)

Nuts of your choice. I used 1oz pecans.

Spray pan with non stick spray (I used non stick butter flavored Pam). Stir, wisk or blend all ingrediants together and pour until cooked. The exact recipe above makes 3, 6" diameter pancakes as pictured below.


No-Carb Protein Pancake

I top mine with 1 large strawberry and Sugar Free Maple Syrup. YUM.

This is Gina Aliotti's recipe for "The No Carb Protein Pancake"  
And here is how I made it (slight variation):
2 egg whites
1 scoop Vanilla WHEY protein powder
1 tsp baking powder
Cinnamon (A GENEROUS amount because I loooove Cinnamon)
1 packet Truvia, 2 packet Splenda
1 1/2- 2 tbsp water(until mixes well)

Spray pan with non stick spray (I used non stick butter flavored Pam). Stir, wisk or blend all ingrediants together and pour until cooked.
The exact recipe above makes 3, 6" diameter pancakes as pictured below.


Chocolate, Peanut Butter and Banana Protein Crepe

Chocolate, Peanut Butter and Banana Protein Crepe

Crepe Ingredients:

3/4 scoop pure Whey Chocolate Protein
3 egg whites
2 Splenda
Cinnamon
Filling (if you’re not on a strict competition diet):

1 TBSP Peanut Butter
1/2 TBSP Sugar Free Syrup
1/2 banana
Directions:

Mix crepe ingredients together in a bowl
Spray large skillet with butter flavored Pam
Pour ingredients into pan and cook thoroughly on one side
Flip crepe, spray with a little spray butter and a dash of cinnamon
Add bananas to top of crepe to “warm” for 30 seconds to 1 minute
Meanwhile, add PB & Syrup to a microwave safe bowl. Microwave for 30 secs, take out of microwave and stir.
Remove crepe from skillet, spread PB/Syrup mixture to one side of crepe and around bananas.


100% Protein Egg White Mini Muffins

100% Protein Egg White Mini Muffins

Ingredients:

‎5 egg whites
TONS of cinnamon
2 packets of Splenda
Tiny drop of vanilla extract (and I mean not even a full teaspoon, just a drop)

Preheat oven to 425 degrees.

In a coffee mug, combine all ingrediants listed above. There is no measurement for the cinnamon except to say that your mixture should pretty much be completely brown in color once you have added a lot of cinnamon to the mixture. Added TONS of cinnamon will (1) provide lots of flavor and (2) carmelize the muffins. Stir WELL to combine all ingredients.

Once the mixture is well combined, spray a mini muffin pan with butter flavored Pam. Pour the egg mixture into 9 spaces of a mini muffin pan. Bake for 12-14 minutes depending on your oven (mine bake for 13 minutes).

You can also sprinkle the top of each muffin RIGHT when they come out of the oven with a cinnamon/splenda mix and they melt on the top of the carmelized cinnamon. YUMMMM!!


Peanut Brittle Oatmeal

I was supposed to try Felicia Romero's Peanut Brittle Protein Shake recipe this morning...but since my babies are sleeping, I didn't want to turn on the blender and risk waking them. So, I decided to make it similar to Felicia's....but in oatmeal form. Turned out HEAVENLY!!!

 

1 scoop Vanilla Whey Protein
1 tsp butterscotch sugar free/fat free pudding mix
1/3-1/2 cup oats (depending on what your diet allows)
2/3 cup water
1 tbsp Peanut Butter

In a bowl, mix the first three ingrediants and add 2/3 cup of water. Microwave for one minute. Take out of microwave andmix in peanut butter. Back in microwave for 30-45 seconds depending on how think you like your oats (and your microwave temp).


Pumpkin Protein Waffles

Pumpkin Protein Waffles

Ingredients:
2 egg whites
1/2 tbsp water
1 tsp vanilla extract
1/8 cup of pure pumpkin
1/2 scoop Vanilla protein powder
1/2 tsp baking powder
2 TBSP Splenda/Truvia or to taste 
1 tsp Cinnamon
1/2 tsp Pumpkin Pie Spice
1/4 tsp Nutmeg
Butter Buds to taste
Blend all together in a Magic Bullet or stand mixer.                                            
Pour onto waffle iron. Top with sugar free syrup or Barney Butter (almond butter). My fave!  

 


Strawberry filled Protein Crepe

Pure Protein Crepe

Original Pure Protein crepe recipe adapted from The EZ Whey Cookbook

Ingredients:

3/4 scoop of Vanilla Whey Protein
3 egg whites
1 Splenda
Spray Butter
1/4 cup Strawberries
Cinnamon

1. Spray large skillet with butter flavored Pam
2. Mix Protein, egg whites and splenda together in a bowl.
3. Pour mixture into pan and spread evenly inside large skillet.
4. Flip once and spray top with spray butter and a dash of cinnamon.
5. Flip again and allow both sides of crepe to cook thoroughly.
6. Remove from pan and lay flat on a plate.
7. Add 1/4 cup sliced strawberries and fold/roll crepe.

Ingredients:

2 egg whites
1/2 tbsp water
1/8 cup of pure pumpkin
1/2 scoop Chocolate protein powder
1/2 tsp baking powder
3 TBSP Splenda for baking
1/2 tsp Cinnamon
1/2 tsp Pumpkin Pie Spice
1/4 tsp unsweetened cocoa
1/4 tsp Nutmeg
Butter Buds to taste

Blend all together in a Magic Bullet or stand mixer.                                            
Pour onto waffle iron. Top with sugar free syrup or Barney Butter (almond butter).

Butterfinger Oatmeal

Butterfinger Oatmeal

Ingredients:

1 scoop Chocolate Whey Protein
1 tsp butterscotch sugar free/fat free pudding mix
1/3 cup oats
1 Splenda packet
2/3 cup water
1 tbsp Peanut Butter

In a bowl, mix the first four ingredients and add 2/3 cup of water. Microwave for one minute. Take out of microwave and mix in peanut butter. Back in microwave for 30-45 seconds depending on how think you like your oats (and your microwave temp).

Yummy!!


Pumpkin Pie Oatmeal
1/2 scoop vanilla protein
1/2 cup oats3
Water
Splenda (to taste)
Pumpkin Pie Spice (to taste)
Dash of vanilla
1/8-1/4 cup canned pumpkin (depending on how much you like pumpkin)
Optional(and yummy): Pecans or Sugar Free syrup
Prepare 1/2 cup oats in the microwave like normal.

In a small bowl, combine protein, vanilla, spices, sugarand pumpkin.

Once oatmeal comes out of microwave, stir in pumpkin mixture.
